3 Tbsp Olive Oil
1 pound Chicken Thighs, sliced
3 tsp chopped Garlic
Salt & Pepper to taste
2 Cups Chicken Broth
2 Cups Hash Browns
3 Cups sliced Carrots
1 Can Black Beans
Grated Pepper Jack and Cheddar Jack cheeses
Measurements are somewhat approximate -- by the time I was done, this filled an electric skillet to overflowing.
Warm Oil over medium heat, add onions and cook, covered, for 5 minutes. Add chicken; season with garlic, salt & pepper and cook, covered, for 15 minutes. Add Broth, Hash Browns, Carrots, Beans and cheeses. Cover and cook for 30 - 45 minutes.
It's nothing to look add, but it's quite yummy and made no leftovers.
