Yummy creamy success: Cheesy Ham-Potato-Corn Chowder

Woot! This was yummy, *and* the boys both liked it. :)

I used the recipe on the potato can and a recipe from the net as suggestions, and came up with this recipe:

Cheesy Ham-Potato-Corn Chowder

2 Tbsp butter
1/2 C chopped onion
2 7oz pouches ham chunks
1 1/2 C chicken broth
1/2 C milk
11 oz can diced new potatoes
11 oz can creamed corn
1 can condensed cream of celery soup
1 packet country style gravy
1/2 C milk

In large saucepan, melt butter until it just starts to turn brown; add chopped onion and ham chunks, cook for 5 minutes over medium heat. Add chicken broth & first 1/2 C milk, bring to a boil. Add potatoes, corn and celery soup. Dissolve gravy packet in 1/2 C milk and stir into boiling mixture. Turn down heat and simmer, stirring often, to keep soup from sticking/burning.

Serve with generous portion of cheese to serve into soup.

This took all of 30 minutes to prepare, and simmered until dinner time, with judicious stirring. I prepared it on the front (larger) burner and moved it back to the back burner to simmer, so there was no "cool down" period in the simmering -- it went from a high heat burner (for the boiling) to a warming up to low from cold burner. It nearly filled my large saucepan, so I was acutely aware of boil-over potential while it was simmering. Starting the simmer from a cold burner probably helped.

Busy busy day

    The traditional funny noises over which a wife wakes a husband imply burglary. In our house, the scary noises are water related. Turns out it was just so quiet that i could hear the water moving in the boiler pipes. Flar even checked down in the cellar for me. Very sweet.

  • Made Critter wear an actual COAT to school

    He usually tried to get away with long sleeves. He even tried claiming that the Oilcloth Outback Duster was a Trench Coat, and against school dress code. That may be true at public schools, but TLS actually doesn't have any proscribed outer wear. I called the middle school head to doublecheck, anyway.

    Didn't bowl my average today, but my team split with the other team. They also sucked. ;)

    Today was the opening day. The "hot" donuts were only just warm, though. Next time I ask specifically for HOT. Flar is on a diet, so I rescued him from one of his share. The boys will no doubt step in and do their bit to save Daddy's diet. ;)

    This was not the total success of last night's dinner, but I got to light brandy on fire, so it was fun. I think I need more experience making this dish. Perhaps in smaller quantity. Also, the recipe called for Sirloin, and I used Filet Mignon. Yes, it was tender, but I didn't do the meat justice. We did have fun with the name, though. The way we were pronouncing "Filet Mignon" in the car sort of evolved into "Flaming Yawn" or, what a dragon eats to get sleepy. ;)
